These gems are mini Eppoisses, and also made by renowned cheesemaker Berthaut. The rinds are washed with brine for 4 weeks and finished with a local brandy, creating a bright orange, show-stopping rind. The silky texture coats your mouth and the sweet, beefy flavors jump into your palate. Weighing in at only 2 ounces each, they can be easily transferred to a dessert cheese plate and paired with your favorite jammy red wine.
