This cheese is the younger brother of the esteemed French cheese, Epoisses. However, the Soumaintrain is washed for less time and allowed to develop a slight dusty bloom on the rind. The texture is dense and fudgy in the center, and starts to get gooey as you move towards the paper thin rind. The brandy washing adds sweet, caramel notes to the meaty, umami flavors. For a washed rind cheese, it doesn't have as much pungency as you would think.
