Paolo, cheesemaker, revived this cheese a few years ago that was originally made by his grandmother.  He covers these small wheels in fresh hemp leaves and then ages them in wooden barrels for 2 months, replacing the leaves as they dry. The leaves help protect the cheese and the wooden barrels help hold in the moisture from the leaves. This aging process gives the cheese a unique flavor full of grassy and woodsy notes with a bright tangy finish.
