The dairy, Bauma, was started by Toni Chueca in 1980. Today, he gets to spend all his time in the cheese room pursuing his passion for farmstead cheese. What separates Madurat from many other cheeses of its kind is the slower lactic fermentation process. After the cheese is formed, he then coats the cheeses in vegetable ash, creating the optimal pH for the bloomy rind to grow. The ash gives the bright citrus notes balancing flavors of minerals and earth, and the texture is dense yet fudge-like.
