What makes this cheese so unique, is that the cheesemaker washes this cheese in a brine solution that is mixed with hops. Typically, alpine cheeses are washed in herbal brine solutions, but this time, the herbs are exchanged for hops. These hops give the cheese a rich piney, grassy, earthy flavor that is typically not there. The flavors harmonize with the caramel, roasted nutty notes also present in the dense, toothsome cheese. Flosserkase also features that wonderfully crunchy texture that signifies its age.
